Consumer preferences and market potential of sesame-based functional food products: An analytical overview

Sesame (Sesamum indicum L.) has gained increasing global significance as a nutrient-dense oilseed valued for its high concentrations of lignans, essential fatty acids, antioxidants, and bioactive compounds, positioning it as a promising substrate for functional food development. The rising consumer inclination toward natural, plant-based, and health-promoting foods has expanded the market potential for sesame-based products, ranging from cold-pressed oils and fortified snacks to nutraceutical formulations. Despite this growing interest, the dynamics influencing consumer preferences such as sensory attributes, perceived health benefits, convenience, pricing, and cultural familiarity remain insufficiently explored, creating a gap in understanding the true commercialization potential of sesame-based functional foods. This analytical overview synthesizes available evidence on nutritional attributes, consumer behavior, market segmentation, innovation trends, and economic opportunities associated with sesame-enriched food products. The research highlights how demographic variables, lifestyle patterns, and increasing awareness of chronic disease prevention shape consumer acceptance. Furthermore, it examines industry perspectives, including supply chain considerations, value addition strategies, and competitive product positioning in domestic and international markets. Particular emphasis is placed on identifying critical drivers and barriers to market expansion, such as limited consumer knowledge, inconsistent product standardization, and inadequate branding strategies. The findings suggest substantial market opportunities for sesame-derived functional foods, provided that producers integrate evidence-based marketing, sensory optimization, and regulatory compliance. This review offers significant insights for food technologists, agribusiness stakeholders, and policymakers aiming to enhance the utilization of sesame in functional food innovation. Overall, the assessment underscores sesame’s strong potential as a functional ingredient capable of meeting the evolving expectations of modern health-conscious consumers, while also contributing to value chain development and economic growth in sesame-producing regions.
